  Seared Belly of Pork

Portions of traditionally farmed boneless belly of pork. We marinade these in a blend of Soya, Worcester and Tabasco sauces, sweetened with honey.

Cooking instructions. Pre-cook in a pre-heated oven for 45 minutes at 190 C, gas mark 5, and a flamed finish on the grill or barbecue will add extra flavour.


Cooking instructions:

Cooking time approximately 16-30 minutes Gas mark 7 220C, 425 F. To oven bake place on a rack in a roasting tin and open roast for 30 minutes, To grill place under a pre-heated grill for 8 minutes each side turning once. Serve with garlic bread and crisp salad. Tip: For a crispy topping dry the scored fat with kitchen paper before cooking.

  Pork Loin with Plum and Ginger Stuffing

A pork escalope, slim lean and tender, is filled with seasoned minced pork, herbs and fresh apple and garnished with Dijon mustard. Product weight 6/8 oz 225g.


Cooking instructions:

Cooking time approximately 45 minutes, Gas Mark 4-5 180 C/350 F. Place on a baking tray and into a pre-heated oven for 25-30 minutes until piping hot and juices run clear. Serve with new boiled potatoes and seasonal vegetables.

  Pork and Pineapple Kebabs

The extra succulence in our pork makes it an obvious choice for kebabs.
These are threaded onto wooden skewers with pineapple or perhaps tomatoes, peppers and onions and are ideal for grilling pork, if lightly brushed with oil, are ideal for cooking in the oven. We will of course be delighted to make your own recipes for you with your own suggested seasoning.

  Normandy Pork

The trimmed eye of the loin of pork filled with sliced apples marinated in Calvados with Camembert cheese and wrapped in ham. Very quick and convenient to cook and will serve form single portions to large family or dinner party size. Product weight approx. ¼lb (½ to 2Kg)


Cooking instructions:

Roast in a pre-heated oven gas mark 5 /190 for 25 min per lb.

  Carre of Pork

A lean rack of pork stuffed with a blend of apricots, almonds and Feta cheese. The delicate taste of this dish is quite outstanding. Product weight. 1 ½lbs – 5lbs (¾ to 2 ½Kg)


Cooking instructions:

Place in a preheated oven gas mark 5, 200 C. 20 minutes per lb.
